We’re all running in different directions each morning. We have to make sure backpacks and lunches are packed. Homework is in the backpack. Husband is off to work. I’m off to work. The kids get on the school bus. About 11 hours later, we are all reunited, at home, where we started.

After a long day of work (or school), we all just want to sit down and relax. One non-negotiable is all sitting down for dinner together. We talk about the day’s highs and lows and everything else in between.

When a meal comes together in around 30 minutes, that works perfectly for me!

This past Saturday night, we tried a new product. I have to admit this new line of Bertolli® Riserva products sounded a little too sophisticated for my family’s palate.

Would my family like Porcini Mushrooms with Truffle Oil? What is truffle oil, anyway? Asiago Cheese & Artichokes Sauce sounded ok, but my family is a little picky when it comes to vegetables. The Marinara with Parmigiano-Reggiano Sauce sounded similar to our typical spaghetti sauce and I really did intend to try something a little different. So, we settled on Balsamic Vinegar & Caramelized Onions Sauce. I like balsamic vinaigrette and I like onions, so wouldn’t I like the two together?

Boy was it a good choice! My husband is a meat and potatoes kind of guy. But, he raved about how good my Chicken Mozzarella Pasta was and how we should add it to our monthly meal rotation.

Here is what you need:

four chicken breasts

one box of penne pasta

extra virgin olive oil

garlic powder

1 cup shredded mozzarella cheese

one jar of Bertolli® Balsamic Vinegar & Caramelized Onions

Step 1: Season the chicken breasts with garlic powder. Saute for 5-7 minutes on each side over medium heat, or until cooked through. {This is Bertolli® tip NO.082 HOW TO SAUTÉ.}

Step 2: Boil pasta until al dente. I used mini penne, which cooks in about 7 minutes. Drain and set aside.

Step 5: Top with 1 cup shredded mozzarella cheese. Bake for 20-25 minutes.

When you remove it from the oven, the cheese will be bubbly and golden brown. Yum!

Serve along with or over hot pasta. Top with additional mozzarella, if desired.
